Coconut Almond Ice Cream

Ingredients:

  • 1 cup coconut milk/cream
  • 1/4 cup almond flour
  • 2 tbsp erythritol or monk fruit sweetener
  • 1 tsp vanilla extract

Instructions:

  1. In a blender, combine coconut milk/cream, almond flour, sweetener, and vanilla extract. Blend until smooth.
  2. Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions.
  3. Transfer to a container and freeze until set.
